Yummy Pan-Seared Tuna Recipe

We went to a fun dinner last evening- the theme was Pinot Noir and Tuna. David made an amazing Pan-Seared Tuna with Avocado, Soy, Ginger, and Lime.

He got such great reviews, I've decided to post the recipe here:

You will need:
2 big handfuls fresh cilantro leaves, finely chopped
1/2 jalapeno, sliced
1 teaspoon grated fresh ginger
1 garlic clove, grated
2 limes, juiced
2 tablespoons soy sauce
Pinch sugar
Sea salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
1 (6-ounce) block sushi-quality tuna
1 ripe avocado, halved, peeled, pitted, and sliced

Then:
In a mixing bowl, combine the cilantro, jalapeno, ginger, garlic, lime juice, soy sauce, sugar, salt, pepper, and 2 tablespoons of olive oil. Stir the ingredients together until well incorporated.

Place a skillet over medium-high heat and coat with the remaining 2 tablespoons of olive oil. Season the tuna generously with salt and pepper. Lay the tuna in the hot oil and sear for 1 minute on each side to form a slight crust. Pour 1/2 of the cilantro mixture into the pan to coat the fish.

Serve the seared tuna with the sliced avocado and the remaining cilantro sauce drizzled over the whole plate.

Pinot fun fact: The name is derived from the french words for "pine" and "black" alluding to the varietals' tightly clustered dark purple pine cone shaped bunches of fruit.

Vail Vacation

Let’s start with the news everyone wants to hear first…we are back home and still in one piece! No broken bones, no bruises, not even those goofy ‘raccoon eyes’

For Hanukkah this year, we geared each other up for this vacation with new skis and poles- we officially have a LOT of ski stuff. We’ve been looking forward to this trip for a while- it was our first time in Vail, and what a week it was!


After a crazy day at work, a painfully delayed train to Baltimore, bribing the curb-side check in attendant and literally sprinting through the entire BWI airport- we were on our way to Denver.

We arrived on Friday night, picked up our awesome Hyundai and headed to Avon. Rick met us at the house and gave us a tour of his and Carolyn’s beautiful place.





David woke up at 6 AM on Saturday morning all set to ski! At around 8:00 we made our way to the mountain, enrolled me in ski school and had a great day.



I took another day of lessons Sunday (with the awesomely name Klaus) and David and Rick had fun on the slopes before going home to watch the Giants win the Super Bowl!!!! Wooooooo!













Rick had to go to Vegas for a conference, so David and I spent Monday and Tuesday together on the mountain. I got my first powder lesson and although it was cold, we had a fantastic time.

Wednesday was our day off- we went to Sports Authority for a helmet and goggles of my own. Then we went to the movies and saw There Will Be Blood, which was great. If you haven’t seen this film yet- try to find it in a theater near you.



The film is loosely based on Upton Sinclair's 1927 novel Oil! It is a dark story of the early days of oil culture in our country, and offers a window into the life and gritty nature of both the country and it’s main character, Daniel Plainview in the early part of the 1900’s. Daniel Day Lewis has won tons of best actor awards for his role as Daniel Plainview, including a BAFTA, Golden Globe, and the Screen Actors' Guild Award- so it seems he is pretty much a sure thing for the Oscar.

Rick came back on Thursday, and the three of us had a good time skiing and relaxing the rest of the trip. Fun times.







We got home on Sunday- we seriously need to pack less next year. We had two suitcases, a boot bag, a ski bag and one carry-on for each of us. We had a wonderful time- but it’s good to be home!
